Making sure your loved ones get all the nutritious foods they need in one meal isn’t easy, especially on those busy weeknights when there’s hardly time to cook.
This quick and easy one-pot recipe is ready to stick in the oven after only twenty minutes of prep time, and we promise the whole family will be asking for seconds. Serve as is for a carb friendly dinner, or pair with your favourite whole-wheat or rye bread.

Ingredients (Serves 4)
4 large or 6 small free range, skinless and boneless chicken breasts
2 cloves garlic finely chopped
1/2 teaspoon dried oregano
½ cup finely chopped fresh dill
Extra virgin olive oil
6 cups (about 200 g) fresh baby spinach
120 g cream cheese
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/2 cup crumbled feta cheese
salt and fresh ground pepper to taste

Instructions
Preheat oven to 200C degrees.
Rub olive oil and garlic over each chicken breast and season with oregano, salt and pepper. Brown the chicken pieces slightly in a pan and transfer to a medium size ovenproof dish. Cover and bake for 15 minutes.
In the meantime, prepare the spinach topping.
Heat olive oil in a skillet; add spinach and cook for 2 minutes, or until wilted.
Remove spinach from heat, stir in the cream cheese and dill. Season with salt and pepper whilst stirring until the cream cheese has softened.
Take chicken out of the oven, flip over each chicken breast and layer the spinach mixture over each piece.
Top with shredded mozzarella, cheddar and feta cheese.
Cover and bake for an additional 20 minutes, or until cheese is well melted and the chicken is cooked thoroughly.
Remove from oven and serve as is or with your favourite bread for a hearty meal.
